Position knife blade in food processor bowl; add bread cubes. Process 30 seconds or until breadcrumbs are fine. Sprinkle breadcrumbs onto an ungreased baking sheet, bake at 350 degrees for 5-7 minutes or until lightly browned. Place breadcrumbs in a shallow bowl, set aside. Combine mayonnaise and water; stir well. Dip fish in mayonnaise mixture; dredge in breadcrumbs. Place fish on a baking sheet coated with cooking spray. Bake at 450 degrees for 15-17 minutes or until fish flakes easily when tested with a fork. Transfer fish to individual serving plates. If desired, garnish with lemon wedges and fresh parsley springs.
